Healthy and Nutritious Falafel Wrap
Falafel:
1 can (15 ounces) chickpeas, drained and rinsed
1/2 cup chopped fresh parsley
3 cloves garlic, minced
1 small onion, finely chopped
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon baking powder
Salt and pepper to taste
Oil for frying
Garlic Sauce:
1/2 cup Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste
For the Wrap:
4 large flour tortillas
Pickles, thinly sliced
Pickled red onions
Fresh parsley leaves
Lettuce leaves, shredded
Instructions:
Prepare the Falafel:
In a food processor, combine chickpeas, parsley, garlic, onion, flour, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is finely chopped and holds together when pressed.
Shape the mixture into small patties, about 2 inches in diameter.
Heat oil in a skillet over medium heat. Fry the falafel patties until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from the skillet and drain on paper towels.
Make the Garlic Sauce:
In a small bowl, mix together Greek yogurt, minced garlic, lemon juice, salt, and pepper until well combined. Adjust seasoning to taste. Set aside.
Assemble the Wrap:
Warm the flour tortillas in a skillet or microwave for a few seconds to make them pliable.
Spread a generous spoonful of garlic sauce onto each tortilla.
Place a few falafel patties onto each tortilla.
Top with sliced pickles, pickled red onions, fresh parsley leaves, and shredded lettuce.
Roll up the tortillas tightly, tucking in the sides as you go.
Serve immediately or wrap in parchment paper or foil for a portable meal.
